The Big Green Egg is probably the most unique method for outdoor cooking. Unlike other charcoal grills, The Big Green Egg is ready for cooking in 10 minutes, uses very little charcoal and the temperature can be maintained with accuracy for hours in any kind of weather without adding fuel. The real bonus, however, is in the flavor of the food prepared on the Egg!

We can sear our steaks at temperatures hundreds of degrees higher than a conventional gas grill or slowly smoke fresh trout for an hour at 250 degrees. We have prepared fresh hams and large pork roasts by maintaining a low temperature for 8 to 12 hours.

We call the charcoal used in The Big Green Egg "Lump." It is not the pressed briquettes commonly available. "Lump" charcoal is made of pieces of real hardwood, available in 20 pound bags. We cook outdoors on The Egg two or three times a week and a bag of Lump still lasts about two months. Lump charcoal starts quickly with a special lighting plug or a piece of crumbled newspaper. It also burns a lot hotter than briquettes, so you don't have to use as much.

The temperature in The Egg is maintained by controlling the amount of air that goes through it during the cooking process. Once set, the temperature will be maintained for many hours.
